You are seventeen years old and saying goodbye to your parents. You feel a single tear fall down your face. Canada is your next destination and you are alone, an immigrant in a new land. Roberto Santillan left Peru and kept his dream alive until he became executive chef of Babalúu Cuisine of the Americas and Supper Club.

The tapas here are plentiful and original. Guacamole will make any Mexican feel at home. Sea Bass Ceviche is marinated in lemon and makes you forget about your problems. Sautéed asparagus with fresh mango goes down as smooth as a sunset over a Latin paradise adventure.

If you enjoy fireworks, try the firecracker. It's diced jerk chicken in a phyllo wrap with a mango salsa. Hello ecstasy!

In between your appetizer and entrees, you can learn to dance like you favorite Latin matinee idol. Yes Belinda, you too can dance with style and pizzazz. The roasted chicken breast is stuffed with porcini mushrooms, goat cheese, roasted red pepper and leeks in a Grand Marnier orange sauce. For fish lovers, a must is the Seared Sea Bass or Grilled Salmon.

The high point of the evening is the paellas. They are cooked to perfection when your order this enchanting dish. The Babalúu Paella is a work of art. It contains chicken, chorizo, shrimp, and calamari in a saffron wine. I can feel my angel wings give me a taste of heaven.

Roberto, your mother smiles when she thinks of you. Now may you experience tears of happiness and know your talent, determination, and love are alive, especially in the kitchen.
