Canadians, from coast to coast to coast, eat a great variety of dishes. Our first challenge was to determine what items best exemplified the geographical and cultural diversity of Canada, and then how to bring them all together in a menu that would provide a unique dining experience for our guests.

Our original menu was, literally, thirteen pages long. We became painfully aware that we could not do everything we wanted to, not all at once, anyway. Decisions were made and items were shuffled around.

In the end, we put together a diverse menu of items ranging from BC Salmon, Alberta beef and Saskatoon berry pie. Manitoba bison, Ontario ham, Montreal smoked meat and lobster fresh from Halifax. These items, mixed in with what Canadians really eat. You&#039;ll find handmade burgers, fresh cut fries and crisp, green salads. You&#039;ll also find a range of fresh seafood, choice hand cut steaks and special daily features.
